Dozo by Tender Mercy in Dayton, OH, seeks an experienced full-time Sushi Chef.Who are we? Position:
- Sushi Chef
Compensation:
- $55-65K salary
- Paid weekly
- Growth-based quarterly bonuses

Schedule requirements:
- Approximately 40hr/wk
- Tuesday – Saturday
- 2:00pm to 10:00pm
Language requirements:
- English
Experience required:
- 2+ years of experience creating elevated sushi and processing high-end fish in an upscale casual or fine dining restaurant.
- Knowledge of various sushi types and sushi-rolling techniques
- Food safety knowledge (certification preferred)
- Menu creation
- Follow written recipes and instructions
- P & L management (maintaining food costs, maximizing profitability)
- Ordering & receiving, inventory
- Purveyor management
- Staff training and motivation
- Knowledge of workplace safety procedures
- Must be able to work in a standing position
- Staff management of < 5 employees
