Overview:The incumbent in this position provides direct and general supervision to beverage team members in order to ensure effective and efficient operation of all beverage operations. The incumbent ensures compliance with all policies and procedures while supporting Hard Rock Casino Northern Indiana’s vision, mission and values, and maintains the integrity of all beverage operations. Responsibilities:

  • .Responsible for the overall leadership of the Food & Beverage departments.
  • Responsible for reviewing all staffing levels, working conditions and other matters which influence quality of guest service as well as profitability.
  • Ensures departments maintain compliance with all laws and regulations, gaming commission rules and company policies and procedures.
  • Responsible for preparing, monitoring and adhering to budgets and ensuring compliance to departmental budget initiatives. Reports budget concerns / deviations to the Beverage General Manager.
  • Creates effective cost control measures and standards to manage business levels and create a quality experience for guests consistently.
  • Negotiates items and prices with vendors ensuring profit margins are within acceptable levels. Works closely with purchasing to coordinate purchasing, receiving and or rotation of stock.
  • Ensures that all areas are complying with controls and standards, responds quickly to remedy areas that need attention.
  • Assures staff is certified in sanitation and safety techniques and complies with all sanitation and bureau of alcohol procedures and laws.
  • Assists the marketing department in menu planning for catering functions and events, and/or special events.
  • Develops food and beverage menus and concepts that can best attract gaming guests.
  • Mentor and develop the food and beverage department by: managing work allocation, training, problem resolution, performance evaluation and the building of an effective and efficient team dynamic.
  • Responsible for hiring, retaining, motivating, evaluating and direct food, and beverage staff, ensuring employees receive adequate guidance and resources to accomplish established objectives.
  • Performs all other duties as assigned and adheres to all Indiana Gaming Regulations and Departmental Standard Operating Procedures.
  • Ensures the smooth operation of a fast-paced, multiple-outlet food & beverage department, including several restaurants, snack bar, and catering and bar service

Qualifications:EXPERIENCE, EDUCATION, AND CERTIFICATIONS

  • Bachelor’s Degree in Business Management or related field, and 5 years’ experience directly related to Food & Beverage; or an equivalent combination of training, education and experience.

ADDITIONAL REQUIREMENTS: (Licenses, Certifications, Testing, etc.):

  • Must obtain and maintain all licenses / certifications per AGCO, Smart Serve, Ottawa Public Health Food Handler’s
  • Must successfully pass background check.
  • Must be twenty-one (19) years of age.
  • Must be able to work holidays and weekends, as well as flexible shifts and/or unusual hours.
  • Proof of authorization/eligibility to work in Canada
  • Must be flexible schedule including nights, weekends, holidays with the understanding days off will fluctuate.
  • Proficient in MS Office Computer applications.
  • Ability to sustain a high level of confidentiality and professionalism.
  • Must be able to address stressful situation with guests with dignity and the utmost tact and politeness.
  • Bartending Certification or Relevant from an established College or Institution

KNOWLEDGE OF:

  • Pertinent Provincial, and local laws, codes, and regulations.
  • Gaming and AGCO regulations.
  • Management of a high-volume restaurant, bar, or similar business.
  • Standard safety and sanitation practices for food and beverage service.
  • Applicable computer systems.

ABILITY TO:

  • Present an image of excitement, enthusiasm, and outgoing personality, while being able to project a professional appearance.
  • Communicate clearly and concisely, both orally and in writing. • Be flexible to work varying shifts and time schedules as needed.
